Pulsed Electric Field processing, PEF Machine
Pulsed electric field processing (PEF machine) is a new no-thermal technology applying on food processing. By very short electric pulses of high voltage, it can make electric breakdown to the cell membranes of plants, animal materials or microorganisms, without damaging the cell compounds, such as vitamins. So after PEF processing treatment, it can make slicing, dicing, peeling, drying and juicing easier, reduce harmful bacteria in food, prolonging shelf life without quality loss. What’s more, for example, in potato processing, PEF processing can reduce oil uptake, less waste, increasing knife durability (up to 60 percent)
PEF(pulsed electric field) processing machine is composed of two sections, one is the Pulsed high voltage generator, another is the processing chamber which is pulsed by the high voltage electric pulses. Our PEF processing machine can generate about 24KV-36KV Pulsed high voltage when treating 3tons/hour -8tons/hour potato. Of course, the voltage, duration and frequency can be changed by the customer’s requirement and the application field.
